Method

5 steps · about 40 min
  1. Heat the olive oil in a medium saucepan over medium heat. Cook the onion for 7–8 minutes until soft and lightly golden, then add the garlic and smoked paprika for 30 seconds.
  2. Stir in the tomato paste and cook for 2 minutes until it darkens. Add the canned tomatoes, crushing them well, then the cannellini beans, water, maple syrup, soy sauce, vinegar and pepper.
  3. Simmer gently, uncovered, for 20–25 minutes, stirring often and crushing a few beans against the side of the pan, until the sauce is thick and glossy and clings to the beans.
  4. Toast the wholemeal bread until crisp.
  5. Spoon the hot beans over two slices of toast per person and scatter with parsley. Leftover beans keep in the fridge for 4 days; reheat until steaming hot.

About this recipe and its sources

Editorially reviewed for ingredient-method agreement, flavour structure, moisture control, practical timings and food-safety cues. Compound products and cross-contact remain label-dependent. Revision 3 uses reduced-salt soy sauce for the savoury depth Worcestershire sauce gave, because Worcestershire is made with anchovy; the recipe is now vegetarian and vegan. For vegans, choose bread with no milk or egg: the generic wholemeal record is a nutrient estimate, not product certification.
