Method

  1. Heat the canola oil in a saucepan over medium heat and cook the diced onion for 5 minutes.
  2. Stir in the curry powder for 30 seconds, then add the tomatoes, small cauliflower florets and drained chickpeas.
  3. Cover and simmer for 18 minutes, until the cauliflower is tender.
  4. Stir in the baby spinach until wilted and serve with the cooked brown rice, warmed through.
