Method

  1. Heat the olive oil in a saucepan over medium heat. Cook the diced onion and capsicum for 5 minutes.
  2. Add the beef mince and cook for 5 minutes, breaking it up, until browned.
  3. Stir in the chilli powder and ground cumin for 30 seconds, then add the tomatoes and the drained kidney beans.
  4. Simmer for 15 minutes, stirring now and then, until thick.
  5. Serve the chilli over the cooked brown rice, warmed through.
