Method

5 steps · about 55 min
  1. Rinse the rice. Put it in a medium saucepan with the 360 g water, bring to the boil, stir once, then cover and cook on the lowest heat for 12 minutes. Turn off the heat and leave covered for 10 minutes.
  2. Heat the canola oil in a large deep frying pan over medium heat. Brown the sausages for 8–10 minutes, turning, until coloured all over. Move to a board and slice into 2 cm pieces; they will finish cooking in the sauce.
  3. In the same pan, cook the onions and carrots for 6 minutes until softened. Stir in the garlic and curry powder for 1 minute, then the plain flour for 30 seconds.
  4. Gradually stir in the 600 g water, then add the red lentils, grated apple and sultanas. Return the sausages, bring to a simmer, cover and cook for 18–20 minutes, stirring occasionally, until the lentils have broken down into a thick sauce and the sausages reach 71°C in the centre.
  5. Stir in the frozen peas and simmer for 3 minutes until hot. Serve over the rice.
