Method

5 steps · about 40 min
  1. Rinse the jasmine rice. Put it in a medium saucepan with the 450 g water, bring to the boil, stir once, then cover and cook on the lowest heat for 12 minutes. Turn off the heat and leave covered for 10 minutes.
  2. Heat the canola oil in a large deep frying pan over medium heat. Add the green curry paste and fry for 1–2 minutes, stirring constantly, until very fragrant.
  3. Add the chicken and stir to coat it in the paste, then cook for 3 minutes until it turns white on the outside. Pour in the coconut milk and the 150 g water, add the fish sauce and brown sugar, and bring to a gentle simmer.
  4. Add the zucchini, capsicum and green beans. Simmer for 8–10 minutes, uncovered, until the vegetables are just tender, the sauce has thickened slightly and the thickest piece of chicken reaches 75°C. Do not boil hard, or the coconut milk can split.
  5. Take off the heat and stir in the basil leaves and lime juice. Serve over the jasmine rice.
