Method

  1. Heat the canola oil in a large frying pan over high heat. Cook the chicken mince for 6 minutes, breaking it up, until cooked through.
  2. Add the grated ginger, grated carrot and diced capsicum and cook for 3 minutes.
  3. Stir in the soy sauce and the cooked brown rice and heat through.
  4. Separate the iceberg lettuce into cups and fill with the chicken mixture.
