Method
- Have 300 g freshly cooked brown rice ready, or reheat safely chilled rice until steaming throughout. This is the cooked weight, not the dry amount. Pat the salmon dry; use two evenly sized pieces and check for pin bones.
- Thinly slice the cucumber and cut the carrot into fine matchsticks. Toss with 25 g lime juice. Toast sesame seeds in a dry pan over medium heat for 1–2 minutes, stirring until lightly golden, then tip out.
- Finely grate ginger and garlic. Mix with soy sauce, sugar and 50 g water. Heat the oil in the non-stick pan over medium-high heat. Sear salmon for 3 minutes on the first side, then turn carefully and reduce the heat to medium-low.
- Pour the sauce around the fish. Cover and cook gently for about 4–6 minutes, depending on thickness, until the thickest centre reaches 63°C on a clean thermometer and the flesh flakes. Remove the cooked fish. Simmer the sauce uncovered for 1–2 minutes until lightly glossy; do not reduce it to a sticky, salty paste.
- Stir the remaining 10 g lime juice into the sauce off the heat. Divide rice, salmon and cucumber-carrot salad between two bowls. Spoon the glaze over the fish and finish with sesame seeds and finely sliced spring onion. Total time assumes cooked rice is already available.
