Method

  1. Cut potatoes into 3 cm pieces. Cover with cold unsalted water in a saucepan, bring to the boil and simmer for 15–20 minutes until easily pierced. Meanwhile, slice onion and capsicum, mince garlic and cut each chicken thigh into three large pieces. Keep raw-chicken utensils separate from ready-to-eat food.
  2. Heat 15 g oil in a large deep frying pan over medium-high heat. Pat chicken dry and brown in two batches for about 3 minutes per side; it will finish cooking in the sauce. Transfer to a plate. Add the remaining 10 g sauce oil and cook onion and capsicum over medium heat for 7–8 minutes, stirring, until softened.
  3. Add garlic, paprika and oregano and stir for 20–30 seconds without scorching. Immediately add canned tomatoes with their juice, 100 g water, 3 g salt and pepper. Break up the tomatoes, scrape the pan base and return chicken and its juices. Cover partially and simmer gently for 15–20 minutes, until chicken reaches at least 75°C in the thickest pieces. If thin, uncover for the last 5 minutes; the sauce should coat a spoon.
  4. Drain the tender potatoes well and leave in the warm empty saucepan off the heat for 1 minute to steam dry. Warm the milk, then mash it into the potatoes with 10 g oil and 2 g salt. Mash by hand until smooth; do not blend.
  5. Stir lemon juice into the chicken sauce off the heat. Divide mash, chicken and all the pepper sauce between four plates. If the chicken needs longer, keep the mash covered on very low heat and stir before serving.
