Method

  1. Finely shred the cabbage and grate carrot. Toss with 20 g lime juice and 0.5 g salt; leave for 10 minutes while preparing the rest. Mix yoghurt, remaining 15 g lime juice and finely grated garlic in a separate bowl.
  2. Check fish for pin bones and cut into six thick strips of similar size. Pat dry, then coat with cumin, paprika, pepper, 1.5 g salt and 5 g oil. Wash hands and clean raw-fish utensils.
  3. Warm the tortillas in a dry pan over medium heat for about 20–30 seconds per side until flexible, or follow the packet instructions. Stack under a clean tea towel to stay soft.
  4. Heat the remaining 10 g oil in the non-stick pan over medium-high heat. Add fish with space between pieces and cook for about 3 minutes on the first side. Turn carefully, reduce heat to medium and cook for 2–4 minutes more, depending on thickness, until the centre reaches 63°C and the flesh flakes. Cook in two batches if the pan is crowded.
  5. Lift slaw from any watery liquid. Fill each warm tortilla with slaw and a piece of fish, spoon over yoghurt sauce and finish with chopped coriander. Serve three tacos per person immediately.
