Method

5 steps · about 40 min
  1. In a bowl, mix the smoked paprika, cumin, oregano, chilli powder, garlic, 20 g lime juice, iodised salt and 10 g of the canola oil. Add the chicken strips and toss to coat. Leave for 10 minutes while you slice the vegetables.
  2. Heat a large heavy frying pan over high heat until very hot. Add the remaining 10 g oil, then the red and green capsicum and onion. Cook for 5–6 minutes, tossing only occasionally, until charred at the edges but still a little crisp. Tip onto a plate.
  3. Add the chicken to the hot pan in a single layer, in two batches if needed. Cook for 5–7 minutes, turning once the underside is browned, until the thickest strip reaches 75°C. Return the vegetables and toss together for 1 minute.
  4. Warm the tortillas in a dry frying pan for 15–20 seconds per side, or wrapped in foil in a low oven, so they fold without cracking. Toss the avocado with the remaining 10 g lime juice.
  5. Bring everything to the table: let everyone fill two tortillas with chicken and vegetables, avocado, a spoonful of yoghurt, salsa and coriander leaves.
