Method
5 steps · about 50 min- Mix the grated nashi pear, reduced-salt soy sauce, brown sugar, garlic, ginger, 5 g of the sesame oil and the chilli in a bowl. Add the beef, toss well and marinate in the fridge for 30 minutes (or up to 4 hours).
- Rinse the rice. Put it in a medium saucepan with the 450 g water, bring to the boil, stir once, then cover and cook on the lowest heat for 12 minutes. Turn off the heat and leave covered for 10 minutes. Meanwhile, toss the cucumber with the vinegar, white sugar and iodised salt and set aside to quick-pickle.
- Heat a large frying pan over high heat and wilt the baby spinach with 1 tablespoon of water for 1 minute; squeeze out any liquid and toss with the remaining 5 g sesame oil.
- Wipe the pan, add the canola oil and heat until very hot. Add the onion for 1 minute, then lift the beef from its marinade and add it in a single layer, in two batches if needed. Sear for 2–3 minutes, turning once, until caramelised at the edges and just cooked through. Pour in any leftover marinade and bubble for 1 minute until sticky.
- Divide the rice between four bowls and top with the beef, sesame spinach, drained pickled cucumber and carrot. Finish with spring onions and sesame seeds.
