Method

  1. Mash the banana in a bowl. Stir in the measured water and chia seeds until evenly combined.
  2. Cover and refrigerate. Stir again after 10 minutes to break up clumps, then keep refrigerated for at least 2 hours until thickened.
  3. Wash and hull the strawberries, then weigh and slice them. Divide the pudding between two bowls and add the strawberries just before serving.
