Method

  1. Bring the measured water to the boil in a saucepan, add the cooked and drained peas and heat through for 1 minute.
  2. Stir in the couscous, cover, take off the heat and leave for 5 minutes.
  3. Fluff with a fork and stir through the olive oil, lemon juice and chopped mint.
