Method

5 steps · about 60 min
  1. Heat the 50 g olive oil in a large frying pan over medium heat. Cook the onions for 30–35 minutes, stirring often and more frequently towards the end, until deep golden-brown and crisp at the edges. Lift a third of them onto paper towel to stay crisp for serving.
  2. Meanwhile, put the lentils and 700 g of the water in a large saucepan, bring to the boil and simmer for 15 minutes until just starting to soften.
  3. Add the rice, the remaining 300 g water, the cumin, cinnamon, iodised salt, pepper and the two-thirds of onions still in the pan (with their oil). Bring back to the boil, then cover and cook on the lowest heat for 18–20 minutes until the rice and lentils are tender and the water is absorbed.
  4. Turn off the heat and leave covered for 10 minutes, then fluff with a fork. Meanwhile, toss the tomatoes, cucumber and parsley with the lemon juice and extra-virgin olive oil.
  5. Pile the mujadara onto plates, top with the reserved crispy onions and serve with the salad.
