Method

5 steps · about 65 min
  1. Heat the oven to 180°C conventional (160°C fan). Line a 20 × 30 cm baking tin with baking paper and lightly oil the paper. Grate the zucchini, then squeeze it firmly in a clean tea towel, a handful at a time, until no more liquid runs out.
  2. In a large bowl, whisk the eggs, canola oil, iodised salt and pepper. Stir in the squeezed zucchini, carrot, frozen corn, spring onions, parsley and 100 g of the cheddar until evenly mixed.
  3. Sift in the self-raising flour and fold gently until no dry patches remain; do not overmix. Spread the mixture evenly in the tin and scatter the remaining 20 g cheddar over the top.
  4. Bake for 30–35 minutes until golden, puffed and set in the centre; a knife inserted in the middle should come out clean with no wet egg. Cool in the tin for 10 minutes so it firms up, then cut into 12 pieces.
  5. Just before serving, toss the cos lettuce and tomatoes with the lemon juice and extra-virgin olive oil. Serve two pieces of slice per person with the salad. Leftover slice keeps covered in the fridge for up to 3 days and is good cold.
