Ingredients

Nutrition weights for 4 servings. Changing the batch size keeps the per-serving nutrition the same.

  • Boneless skinless chicken thighs, raw600 g
  • Olive oil, divided20 g
  • Brown onion, diced160 g
  • Zucchini, diced300 g
  • Fresh garlic, crushed12 g
  • Dried oregano3 g
  • Ground black pepper1 g
  • Iodised salt1 g
  • Dry risoni or orzo pasta300 g
  • Prepared chicken stock350 g
  • Tap water350 g
  • Frozen green peas180 g
  • Lemon juice50 g
  • Fresh flat-leaf parsley, chopped20 g

Method

  1. Pat the chicken dry and cut each thigh into two or three large pieces. Heat 10 g of the olive oil in a large deep frying pan over medium-high heat. Brown the chicken in a single layer for 3 minutes per side, then move it to a clean plate; it will finish cooking later.
  2. Reduce the heat to medium. Add the remaining oil and onion and cook for 4 minutes until softening. Add the zucchini and cook for 4 minutes until lightly golden at the edges. Stir in the garlic, oregano, pepper and iodised salt for 30 seconds.
  3. Stir in the dry risoni for 1 minute so it is coated. Pour in the stock and water, scraping the browned bits from the pan. Return the chicken and any juices, bring to a gentle simmer, cover and cook for 9 minutes, stirring once halfway so the pasta does not catch.
  4. Stir in the peas. Cook uncovered for 4–6 minutes, stirring often, until the risoni is tender, the liquid has reduced to a glossy sauce and the thickest chicken piece reaches 75°C. Add a splash of hot water only if the pasta is still firm before the pan is saucy.
  5. Remove from the heat and stir through the lemon juice and parsley. Rest uncovered for 3 minutes, then divide between four bowls. The risoni should be loose and creamy, not soupy or dry.

Estimates from the identified food records, including dated product labels where specified. “Not reported” is unknown; partial totals may be incomplete. Whole-batch amounts are not compared against one person’s daily reference. Per-serving percentages compare one serving with daily RDI/AI targets for Women 31–50 years, not upper limits. Values use foods in their recorded states; additional cooking losses are not modelled unless you select a supported method when editing ingredients.
