Method

5 steps · about 50 min
  1. Put the chicken in a medium saucepan, cover with cold water by 3 cm, bring just to a simmer, then cover and turn the heat to low. Poach for 12–15 minutes until the thickest part reaches 75°C. Rest in the liquid for 5 minutes, then drain, cool and slice thinly; discard the poaching water.
  2. Cook the rice vermicelli following the packet directions, rinse under cold water and drain very well, then weigh 200 g. Prepare the lettuce, carrot, cucumber, mint and coriander and set everything out in bowls.
  3. Whisk the peanut butter, reduced-salt soy sauce, lime juice, honey, chilli and the 40 g warm water until smooth and pourable for the dipping sauce.
  4. Dip one rice paper sheet in warm water for 10–15 seconds until just pliable, then lay it on a damp tea towel. Across the lower third, place a little lettuce, noodles, carrot, cucumber, chicken and a few herb leaves. Fold in the sides and roll up firmly. Repeat to make 12 rolls, keeping finished rolls under a damp tea towel.
  5. Serve three rolls per person with the peanut dipping sauce. Eat within 2 hours, or keep covered in the fridge for up to a day; they firm up when chilled.
