Method

  1. Heat the oven to 220°C conventional (200°C fan). Prick the potatoes several times, place on a tray and bake for 50–65 minutes, until the skins are crisp and a knife slides easily through the centre.
  2. While the potatoes bake, drain the tuna and sweetcorn thoroughly. Mix them with the mayonnaise, lemon juice and black pepper, breaking the tuna into flakes.
  3. Split the hot potatoes, fluff the centres with a fork and divide the tuna mixture between them. Return to the oven for 5 minutes, until the filling is hot throughout, then serve.
