Ingredients

Nutrition weights for 4 servings. Changing the batch size keeps the per-serving nutrition the same.

  • Egg-free wheat pasta, dry280 g
  • Beef sausages, raw, casings removed360 g
  • Olive oil10 g
  • Brown onion, peeled and diced150 g
  • Garlic, peeled and finely chopped10 g
  • Canned tomatoes in juice, no added salt, undrained400 g
  • Baby spinach120 g
  • Ground black pepper1 g

Method

  1. Bring a large saucepan of water to the boil. Cook the dry pasta until tender with a slight bite, then reserve 125 ml of cooking water and drain.
  2. Meanwhile, heat the olive oil in a large frying pan over medium heat. Squeeze the sausage meat from the casings, add it to the pan and break it into small pieces. Cook for 6–8 minutes until browned, no pink remains and the thickest pieces reach 71°C.
  3. Add the onion and cook for 4–5 minutes until softened. Stir in the garlic for 30 seconds, then add the canned tomatoes and black pepper.
  4. Simmer for 8–10 minutes, stirring occasionally, until the sauce thickens enough to lightly coat a spoon. Stir in the spinach until fully wilted.
  5. Add the drained pasta and toss well. Loosen with only as much reserved pasta water as needed for a glossy sauce, then serve hot.

Estimates from the identified food records, including dated product labels where specified. “Not reported” is unknown; partial totals may be incomplete. Whole-batch amounts are not compared against one person’s daily reference. Per-serving percentages compare one serving with daily RDI/AI targets for Women 31–50 years, not upper limits. Values use foods in their recorded states; additional cooking losses are not modelled unless you select a supported method when editing ingredients.
