Method

5 steps · about 40 min
  1. Soak about 250 g dry flat rice noodles in hot water following the packet directions until pliable but still firm, then drain well and weigh 700 g. Whisk the fish sauce, brown sugar, 40 g lime juice, chilli and the 30 g water in a jug until the sugar dissolves.
  2. Toast the peanuts in a dry small frying pan over medium heat for 4–5 minutes, shaking the pan, until golden; cool and roughly chop.
  3. Heat 10 g of the canola oil in a wok over high heat. Fry the tofu for 4 minutes until golden, then add the prawns and stir-fry for 2–3 minutes until pink, curled and opaque all the way through. Tip onto a plate.
  4. Add the remaining 15 g oil, the garlic and shallots and stir for 30 seconds. Push them to one side, pour in the eggs and scramble until just set. Add the noodles and the sauce and toss for 2–3 minutes until the noodles have absorbed the sauce and are hot.
  5. Return the prawns and tofu with the bean sprouts and spring onions, and toss for 1 minute until the sprouts are just wilted. Serve topped with the peanuts and coriander leaves, with lime wedges to squeeze over.
