Method

  1. Rinse the rice. Put it in a saucepan with 500 g water, bring to a boil, then cover and cook over very low heat for 12 minutes. Remove from the heat and leave covered for 10 minutes before fluffing.
  2. While the rice cooks, cut the pork across the grain into 1 cm strips. Whisk the soy sauce, lime juice, brown sugar, cornflour and 80 g water until smooth.
  3. Heat half the canola oil in a large frying pan or wok over high heat. Cook half the pork in a single layer for 2–3 minutes, turning once, until browned. Transfer to a clean plate and repeat with the remaining oil and pork.
  4. Add the onion and capsicum to the hot pan and stir-fry for 4 minutes until brightly coloured and just tender. Add the garlic and ginger and stir for 30 seconds. Add the pineapple and cook for 1 minute.
  5. Return the pork and its juices to the pan. Stir the sauce again, pour it in and toss for 2–3 minutes until glossy, bubbling and thick enough to cling to the pork. Check the thickest pork strips have reached at least 71°C. Fold through most of the spring onion.
  6. Divide the rice among four bowls, spoon over the pork and pineapple, and finish with the remaining spring onion.
