Method
- Bring the water to the boil in a saucepan, stir in the couscous, cover, take off the heat and leave for 5 minutes.
- Heat half the olive oil in a large frying pan over high heat. Cook the lamb leg steak for 3–4 minutes each side, then rest it on a board for 5 minutes.
- In the same pan, cook the sliced red onion and halved cherry tomatoes for 3 minutes. Stir in the baby spinach until wilted.
- Fluff the couscous with a fork and stir through the vegetables, the rest of the oil and the lemon juice.
- Slice the lamb and serve on the couscous.
